Should we be looking at Assisted Living or an Adult Care Home for my father?

That is a complex question. A lot is based upon his care needs, the frequency and urgency of his needs, his personality and his finances.

Assisted Living tends to be more of a social model rather than a clinical model. People need to be quite self-sufficient for the greater part of their day. Assisted Living is ideal for people who have care needs which are predictable and which can be scheduled.

An Adult Care Home is a better choice for someone who has random needs, or for people who aren't able to necessarily communicate their needs. With the more intimate setting, care givers are able to know in advance what a resident may need.

This topic should be discussed with a Referral Agent so that you can weigh the short-term and long-term needs of your father.
